With locally foraged botanicals including apple blossom, Irish honey and elderflower, this is a floral forward contemporary style gin with bright citrus and sweet florals on the nose.

It is rich and silky smooth on the palate with orange peel and fresh blossoms with notes of apple complementing the juniper backbone.

It has a long abundant finish with a honeyed edge providing exceptional balance.

Silks Irish Dry Gin is a perfect serve in a G&T, garnished with a slice of red apple. It also works beautifully in a classic martini.

People

A family-owned business, Boann Distillery was born and believed in by Patrick and Marie Cooney, who have been joined in the enterprise by their family; Sally-Anne whose creation the gin is, Celestine, Peter, Patrick and James.

With botanicals foraged from the Cooney orchards, and a wealth of experience in the drinks industry, Silks Irish Dry Gin can truly be described as a true family creation.

Process

Silks Irish Dry Gin is distilled by hand in small batches in a 500-litre custom “Bennet” copper pot still.

To create this wonderful Irish gin, the 14 distinct botanicals are macerated for 24 hours. Steeping the traditional botanicals for a day before distillation ensures this gin is fresh, bright, and balanced.

It is then slow distilled with vapour infusion. This allows for the more subtle underlying flavours of the signature Irish botanicals to come through.

Each distillation is non-chill filtered and cut back with Boann Distillery’s own deep well water before bottling.

Provenance

Located in the sliver of Drogheda which is in Co. Meath, Boann Distillery have created this distinct Irish Gin with botanicals foraged locally in the family orchards.

Botanicals include apple blossom from the trees, honey from the bees and elderflower and hawthorn blossom from the hedgerows.

This gin also honours the history of horse racing in region, with the name inspired by the silk racing colours worn by jockeys at the Bellewstown racecourse which can be seen in the distance from the distillery.
